Serves 10 guests

For the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Cocktail (yields 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Method

For the Citrus Syrup: Put every ingredients inside a pot, heat until it reaches a gentle boil, mixing until the sugar dissolves. After that, turn off the heat allowing it to cool down entirely. Pour into an sterilised bottle, seal and refrigerate it in the fridge, where it will keep for around a month.

Preparing the Premix: Combine every spirits and syrup into one sizeable container, leave to sit for an hour, then strain best through cheesecloth, so it's completely strained.

To serve: Pour 85ml from the cocktail base into a mixing glass containing ice, gently stirring lightly for one minute until cold. Pour to a cold coupe glass or similar, decorate with some cranberries and complete it with a quick spritz of mandarin oil above the glass.
